Demand the number

A mitt’s real spec is seconds of dry hold against a hot tray. “Heat resistant” compares nothing.

A supplier who has tested their product answers with a number; one who has bought a listing answers with an adjective.

Match the shell to the sink

Quilted cotton insulates with trapped air, and its rating assumes it is dry. Near sinks, steam and dish pits, that assumption fails by mid-morning.

Silicone shells bead water off and keep their rating wet. Ask where the mitt will hang, and buy for that spot.

Specify the cuff in inches

The classic oven burn is the rack edge across the forearm — the palm was always covered.

Deep ovens, deck ovens and low wall ovens earn a long cuff. Get the length in inches on the quote, not the word “extended”.

Check the palm face

A heavy enamel dish between two smooth quilted faces is a drop with a schedule. Textured silicone on the palm face locks the same hold solid.

It costs little and it is the difference people feel on the first heavy tray.

Put the brand where it lives

A mitt is worn seconds a day and hangs in sight the rest of its life. The back panel — facing the room from its hook — is the billboard.
